

SPICY MEATBALLS OVER RICE!
TIP: DOUBLE THE RECIPE AND FREEZE HALF FOR AN EASY MEATBALL SUB DINNER LATER ON!
1 pound lean ground beef or turkey
1/2 cup plain bread crumbs
3 tablespoons milk
1/2 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon pepper
1 yellow onion chopped
1 egg
1 jar (16 ounces) of your favorite salsa
1. Heat oven to 400ºF. Mix all ingredients except salsa. Shape mixture into twenty 1 1/2-inch meatballs.
2. Place in ungreased rectangular pan, 13x9x2 inches. Bake uncovered 25 to 30 minutes
3. In 2-quart saucepan, place salsa and meatballs. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer about 15 minutes or until salsa and meatballs are hot. Serve over instant rice and top with green onions or peas to sneak in a veggie for the kiddos!
